Irish Dinner: Corned Beef & Cabbage and Bailey’s Chocolate Chip Cheesecake

We held our annual St. Patrick’s day dinner a few days late this year, but my family will eat corned beef and cabbage anytime I have the urge to make it. We have brined our own brisket to make corned beef, but tonight I used a corned beef I bought at the grocery store. It amazes me how many people have told me they’ve never cooked corned beef before. I think it’s the simplest dinner in the world to make—all you need is a Crock-Pot. Open package of corned beef, dump all contents into the slow cooker, and turn the dial to either low (6 to 8 hours) or high (4 to 5 hours) depending how soon you want dinner. That’s it. Easy peasy.

For the cabbage, my folks traditionally did the boiled cabbage bit. It was okay, but it really is bland. I’ve since done my St. Patrick’s Day cabbage by frying it. Add a stick of butter to the skillet, cut up your cabbage however you like it (diced, sliced, etc.). Add it to the skillet, season with salt and pepper to taste, and let it cook until the cabbage is softened but not mush. Another easy peasy side dish, which is how I like them 🙂

For dessert, it had to be something Irish-influenced as well, and what’s more Irish than booze? Today I decided to make a Bailey’s chocolate chip cheesecake in honor of St. Patrick’s Day. It really was a toss-up between this and a Guinness dark chocolate cheesecake, but Bailey’s won out. This time anyway!

I’ve made this cheesecake before. Be forewarned, though, the flavor of the Irish cream really comes through in the final product. A lot of recipes call for 3/4 cup of Bailey’s, which I used the first time I made this. If you love Bailey’s, you’ll probably be fine with it, but if you’re so-so or you only want a hint of the Irish cream flavor, you can definitely use less. I typically use about 1/4 cup of Bailey’s because I want to taste the rest of the ingredients, not just Bailey’s. This doesn’t have a ganache on top, but feel free to add one if you’d like — the more chocolate the merrier I say 🙂

The cheesecake pictures aren’t the best – still trying to find the best lighting in this new apartment, and the cheesecake itself decided to split after about 2 hours of cooking (of course!)  — but it tasted devine 🙂

Bailey’s Chocolate Chip Cheesecake

1 1/2 cups graham cracker crumbs (10 to 12 crackers)

4 tablespoons butter, melted

1 tablespoon sugar

32 ounces (4 packages) cream cheese, at room temperature

1 1/2 cups sugar

1/4 cup Bailey’s Irish cream liqueur (or other brand is fine)

4 eggs

1 cup sour cream

1 tablespoon good vanilla

1 1/2 cup dark chocolate chips

 

Preheat oven to 350 degrees Fahrenheit. Wrap the sides of a 9-inch springform pan with heavy-duty aluminum foil.

Combine graham cracker crumbs, 1 tablespoon sugar and the melted butter. Press mixture onto the bottom of the springform pan. Set aside.

In a mixer, beat the cream cheese and the 1 1/2 cups sugar until smooth. Add the Bailey’s, and stir to combine. Add in the eggs, one at a time, and beat until thoroughly mixed. Mix in the sour cream and vanilla, mixing until just smooth. Fold in the chocolate chips.

Pour cheesecake batter into the springform pan. Place the springform pan in a larger pan, and add water to that pan until it reaches halfway up the sides of the springform pan. Bake for 1 hour at 350 degrees Fahrenheit. Turn off the oven, and leave cheesecake in the oven for an additional hour. Remove from the oven, let cool slightly, and then refrigerate for at least 4 hours before serving. Top with chocolate ganache or whipped cream as desired.

Baked Mexican Goulash

Are you the kind of cook that looks through your pantry and wonders what could I make with these ingredients? If you are, you’ll appreciate this recipe for Mexican Goulash. I’d been working hard writing and editing, but I still had to put something on the table for dinner. I knew I had ground meat. I knew I had dried pasta. My pantry is full of seasonings and canned goodies. But I had no ideas running through my head.




When I get like this, I usually do one of two things: Italian or Mexican. Since I had more Mexican-themed ingredients on hand, including home-canned chili beans, that’s the way I went. The ingredients can obviously be changed to include things you have on hand in your pantry, and amounts are approximate. This is a throw-it-together-quick casserole that comes together quick for those busy nights, and you can top each serving with shredded lettuce, sour cream, guacamole or taco sauce if you prefer.

Baked Mexican Goulash

1 box dried macaroni or rotini pasta

1 pound ground beef

1 envelope taco seasoning

1 can Rotel tomatoes

1 pint chili beans

1/2 cup salsa

1 small can sliced black olives

2 cups shredded cheddar cheese

Shredded lettuce, sour cream, guacamole and taco sauce (optional)

 

Cook dried pasta according to package instructions. While the pasta is cooking, in a large skillet, brown the ground beef until no longer pink; drain. Return the browned beef to the skillet, and add the package of taco seasoning according to the package instructions. Cook for a few minutes to incorporate the seasoning into the meat.

In a large mixing bowl, combine the cooked pasta, ground beef mixture, tomatoes, chili beans and salsa. Stir to thoroughly combine. Pour pasta mixture into a greased 9 x 13-inch baking pan. Evenly spread the sliced olives over the top of the pasta. Top the casserole with the shredded cheddar cheese.

Bake at 350 degrees Fahrenheit for about 40 minutes, or until the cheese is nicely brown on top and the casserole is bubbly. Top each serving with shredded lettuce, sour cream, guacamole and taco sauce if desired.

Cody’s Skillet Pasta

While I was busy working today, my oldest son decided he’d make dinner for everyone. He’s a good cook who has learned to look through the cupboards and freezer, see what’s available, and come up with something tasty to eat. Tonight he made a skillet pasta, and it was really good. Thanks Cody!

Cody’s Skillet Pasta

1 pound ground venison or ground beef (he used venison)
1 jar spaghetti sauce
1 package egg noodles
8 ounces canned mushrooms (he used canned Hen of the Woods mushrooms)
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Splash balsamic vinegar
Splash liquid hickory smoke
Shredded mozzarella cheese
Parsley flakes for sprinkling on top

Cook egg noodles according to package directions; drain and set aside.

In a large skillet, brown ground meat until no longer pink; drain. To the ground meat, add the spaghetti sauce, cooked noodles, mushrooms, seasonings, balsamic vinegar, liquid smoke, and stir to completely combine. Sprinkle shredded mozzarella cheese on top, and let cook until the cheese melts. Sprinkle parsley flakes on top just before serving.

Cheeseburger Mac Stew

All over the Internet I keep reading recipes for cheeseburger soup. My sister even makes a version of it, although I haven’t had the privilege (yet) of tasting it. So, when I was trying to think of something different for dinner last night, I thought I’d try my hand at making this soup. A lot of the recipes I read online included hash browns, and since I didn’t have any frozen hash browns on hand and didn’t feel like making them from scratch (I was feeling lazy), I omitted them, but feel free to include some if you try this.

I will confess that I keep the dreaded “blue box” macaroni and cheese in my kitchen cupboards. While I make mac and cheese from scratch (and my husband and I don’t particularly care for the store-bought stuff), my sons like to have the “blue box” on hand to make themselves a quick snack. I thought this recipe would be a good way to get rid of one of those boxes from my cupboards, and the cheese mix from the box did help thicken up the soup – hence I named the recipe cheeseburger mac stew.

Cheeseburger Mac Stew

3 cups chicken broth
2 large carrots, scraped and shredded
2 cups milk
1/2 box Velveeta cheese
1 pound hamburger, cooked and drained
1 box macaroni and cheese
Salt and pepper to taste

In a skillet, brown hamburger until no longer pink. Drain and set aside.

In a large stockpot, combine chicken broth and shredded carrots. Cook for 10 minutes, or until the carrots become tender. Add the milk, Velveeta and cheese mix package from the macaroni and cheese box. Stir until well combined and the cheese mix is dissolved. Add the cooked hamburger and the macaroni from the package. Cook until the macaroni is tender, about 8 minutes or so. Season with salt and pepper.

Unstuffed Cabbage

I had a really great meal planned for dinner. I was going to make traditional cabbage rolls, something I hadn’t eaten for a long time, probably since my grandmother was alive. I’d found a really nice head of cabbage at the grocery store and had everything planned out for the meal – and then work got in the way. I love working from home, but sometimes work can get crazy with deadlines and tasks that need to be managed. So my wonderfully planned meal went out the window.

But I still had all the makings for cabbage rolls, just not all the time I needed. Cabbage rolls generally take about 2 hours to bake and about 30 minutes or so for the prep work. I was still hungry for the taste of a cabbage roll, so I decided to make unstuffed cabbage in a big skillet instead. It uses all the same ingredients, but dinner can be ready in about half an hour. Win-win for me!

I used Minute Rice in this recipe simply because I was pressed for time in getting something on the table for everyone to eat, but you can definitely use the long-grain rice of your choice. You’ll just need to extend the cooking time to allow the rice to cook. I also added a pint of homemade salsa to my skillet unstuffed cabbage. Salsa isn’t a usual ingredient in traditional cabbage rolls, but it adds a nice spicy flavor when you’re making it on the stove top.

Unstuffed Cabbage

1 pound ground beef
1/2 an onion, diced
1/2 head green cabbage, chopped
2 15-ounce cans tomato sauce
1 pint salsa (optional)
2 cups Minute Rice (or your favorite long-grain rice but add more cooking time)
2 cups water
Salt and pepper to taste

In a large skillet, brown ground beef with the onion until the beef is no longer pink. Drain. To the skillet, add the chopped cabbage, and stir to combine. Let it cook for a few minutes to let the cabbage wilt a bit (and make more room in the skillet). Add the tomato sauce, salsa if using, 2 cups of rice and 2 cups of water. Stir to combine everything.

Let cook over medium heat for about 15 to 20 minutes, or until the rice has absorbed all the water and the cabbage is tender. If you’re using long-grain rice, the cooking time may be closer to 30 minutes. Stir frequently to avoid anything sticking in the bottom of the pan. Season with salt and pepper to taste.

Spinach Lasagna

My family would eat pasta just about every night of the week if that’s what I made. Well, maybe not Kevin so much, as he’s a traditional meat-and-potatoes kind of guy, but my sons would. They frequently ask for lasagna, and when they were little, I used to add fresh spinach to my lasagna to “sneak” in a few more vegetables into their diet – not that they didn’t ever eat their veggies, but it was just one more way to get some greens in them. Now my oldest son requests that I include spinach when I make a lasagna, so I guess my sneaky ingredient somehow became his favorite way to eat lasagna.

To me the best lasagna has a ton of cheese in it, so I use lots of different blends in my recipe. For the ground meat, I’ve used ground venison, ground beef, Italian sausage and a combination of all. My oldest son likes it best when I use a combination of ground beef and ground Italian sausage, so this recipe reflects that.

Spinach Lasagna

1 package lasagna noodles, cooked according to package directions, cooled
1 pound ground beef
1 pound ground Italian sausage
1 small onion, diced
16 ounces diced mushrooms (store-bought canned, fresh or home canned)
2 jars spaghetti sauce (store bought or home canned)
1 8-ounce can tomato paste (I used Italian-seasoned tomato paste)
8 ounces ricotta cheese or small-curd cottage cheese
1 egg, slightly beaten
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon parsley leaves
1 teaspoon Italian seasoning
1/2 teaspoon salt
1 package fresh spinach leaves, washed and patted dry
2 cups shredded Italian cheese blend
2 cups shredded mozzarella cheese, divided
8 ounces sliced Provolone cheese
Freshly grated Asiago cheese
Freshly grated Parmesan cheese

Cook lasagna noodles per package directions. Set aside.

In a large skillet, brown ground beef and Italian sausage with the diced onions until the meat is no longer pink. Drain grease. In the same skillet, to the browned meat add 1 jar of spaghetti sauce, the tomato paste and the mushrooms. Cook until the mixture thickens.

In a large bowl, combine the ricotta or cottage cheese, egg, 1/2 cup Parmesan cheese, garlic powder, parsley, Italian seasoning and salt. Stir until well combined.

Combine the 2 cups of Italian shredded cheese and 1 cup of the shredded mozzarella cheese in another bowl.

In a large lasagna pan, layer the bottom with cooked lasagna noodles. Spoon some of the meat mixture on top of the noodles. Add a layer of the sliced Provolone cheese. Add a layer of the ricotta/egg mixture over the sliced Provolone. Add a layer of spinach leaves. Add a layer of the combined shredded cheeses.

Repeat layers, starting with another layer of noodles, and continue until you’ve used all the noodles, meat mixture, ricotta cheese mixture, spinach and combined shredded cheeses.

After you’ve completed all the layers, pour the remaining 1 jar of spaghetti sauce over all the layers. Top the sauce with the remaining 1 cup of shredded mozzarella cheese and additional freshly grated Asiago and Parmesan cheeses, if desired.

Bake the lasagna in a 350 degrees Fahrenheit oven for about 60 minutes, or until the cheese is browned and the lasagna is bubbly.

Serve with additional grated Parmesan and Asiago cheeses.

Jumbo Stuffed Shells

The boys and I love anything Italian, and while I usually make lasagna when I need a recipe for lots of people, I decided to make stuffed pasta shells last night instead. The ingredients are basically the same, but it gives a fun presentation when I use the shells.

This recipe is one I just “throw together” without a recipe, so the amounts given are just an estimate. Feel free to vary the spice amounts to your family’s tastes. I ended up with 34 stuffed jumbo pasta shells. I almost didn’t get a picture of them either – the boys and their friend simply devoured them.

 

Jumbo Stuffed Shells

1 package jumbo pasta shells
1 pound ground beef
1 pound ground Italian sausage
1 small container ricotta cheese or small-curd cottage cheese
2 eggs
1 cup fresh spinach, finely chopped
1 cup shredded mozzarella
1/2 cup Parmesan cheese
2 teaspoons Italian seasoning
1 teaspoon garlic powder
1 teaspoon parsley flakes
One jar good marinara sauce (or use homemade)

Cook pasta shells according to package instructions. Set aside.

In a skillet, brown the ground beef and Italian sausage until no longer pink. Drain.

In a large bowl, combine the ricotta cheese, mozzarella cheese, eggs, chopped spinach and spices. Add the drained, browned ground meats. Stir until well combined.

Stuff the meat and cheese mixture into each pasta shell. Place in a greased 9 by 13-inch baking dish. Pour the marinara sauce evenly over the pasta shells. Bake in a 350 degrees Fahrenheit oven for approximately 30 to 35 minutes, or until the cheese is bubbling in the shells.

Taco Salad For A Crowd

When you have kids in sports, you frequently have potluck dinners, whether before a cross country meet, football game or after the season for an awards banquet. One of my go-to recipes for these events is taco salad, first because the kids usually eat all of it (and I don’t have to worry about leftovers) and second because you can make a large recipe. I usually end up making this in my lasagna pan so I’ve got room to mix everything together. I got this recipe when I was in 4-H from one of our group leaders.

If you aren’t making a dish for an entire team and don’t want to have taco salad for days on end, this recipe can easily be halved.

 

Taco Salad For A Crowd

1 1/2 pounds ground beef (you can use your favorite ground meat: turkey, venison, beef, pork or even chicken)
1 package taco seasoning (optional)
3 packages ready-to-eat salad greens
1 can kidney beans, rinsed and drained
1/2 a medium red onion, diced
2 cups cherry tomatoes, halved
16 ounces sliced black olives
2 cups shredded cheddar cheese
1 bag original flavor Doritos, crushed
1 bottle Catalina salad dressing
Sour cream (optional)

In a large skillet, brown the ground beef until no longer pink; drain excess fat. Add taco seasoning to the browned meat (if using), mixing well until combined.

While the meat is browning, in a large bowl combine the remaining ingredients except the sour cream and Catalina dressing. Add the browned ground beef. Pour the Catalina salad dressing over the ingredients, and mix well until the salad dressing evenly coats everything. Serve with sour cream if desired.

Days of Casseroles-Day 3: Pizza Casserole

Well, we’ve made it through three whole days of the casserole experiment, and so far, no complaints. The first two casseroles were rated as ones I can make again, so that’s good news 🙂

Today’s casserole is another family favorite – Pizza Casserole. You can change out the ingredients to ones your family loves. This is what I usually make to satisfy our pizza cravings.

 

Pizza Casserole

1 pound ground beef
1 16-ounce package rotini noodles
1/2 cup chopped onion
2 eggs
1/3 cup Parmesan cheese
1/4 cup butter, melted
1/2 teaspoon garlic powder
1 16-ounce jar meatless spaghetti sauce (I use homemade canned sauce)
1 8-ounce can mushrooms (or use fresh if you prefer)
1-2 teaspoons pizza seasoning, optional (I use Wildtree’s Pizza Sauce seasoning)
1 package pepperoni
2 cups shredded mozzarella cheese

Combine the eggs, Parmesan cheese, garlic powder and melted butter in a large bowl. Set aside.

Cook rotini noodles per package instructions. Add cooked noodles to the egg and Parmesan cheese mixture. Toss noodles to coat. Set aside.

Cook ground beef with the onions until the beef is completely brown. Drain. Add spaghetti sauce and mushrooms, and cook on low for 5-10 minutes or until the sauce is well combined and slightly thickened. Add meat mixture to the cooked noodle mixture. Add pepperoni slices, reserving some to place on the top of the casserole. Mix all ingredients until well combined.

Place mixture into a greased 9 x 13-inch baking dish. Top casserole with remaining pepperoni slices and the 2 cups of shredded mozzarella cheese. Bake covered in a 350 degrees Fahrenheit oven for 30 minutes. Uncover and bake for an additional 10 minutes, or until cheese is melted and bubbly.

Days of Casseroles-Day 1: Baked Spaghetti…Plus Basic Honey White Bread

I talked to Kevin about trying to do a casserole a day for a year, and I think he’s up for the challenge. I have so many different casserole recipes, both in my personal cookbooks and notebooks of recipes I’ve found over the years and from ones I’ve found on Pinterest and the Internet. I told him I’d mix it up, and not every casserole recipe will be a main dish for dinner. There will be side dishes and breakfast casseroles too. Either way, we’ll get to try a bunch of new recipes and find some new favorites along the way. 🙂

Baked Spaghetti

1 16-ounce package spaghetti
1 pound ground beef
1 medium onion, chopped
1 26-ounce jar meatless spaghetti sauce (I used homemade canned sauce)
1/2 teaspoon seasoned salt, optional
2 eggs
1/3 cup grated Parmesan cheese
5 tablespoons butter, melted
2 cups small-curd cottage cheese
4 cups shredded mozzarella cheese

Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook ground beef and onion over medium heat until the meat is no longer pink. Drain. Stir in the spaghetti sauce and seasoned salt, if using. Set aside.

In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain the spaghetti noodles. Add noodles to the egg mixture, and toss to coat.

Place half the spaghetti mixture in a greased 13 x 9 x 2-inch baking dish. Top with half the cottage cheese, meat sauce, and mozzarella cheese. Repeat the layers. Cover with foil, and bake at 350 degrees Fahrenheit for 40 minutes. Uncover and bake for 20 to 25 minutes longer, or until the cheese is melted.

I haven’t made homemade bread in a while, and since the loaf on the table was pretty low, I figured it was time. Travis likes plain white bread the best, despite my attempts to convert him to whole wheat, but this recipe is a tasty one, even if it is white bread! I did use my bread machine, but I’ve included instructions if you want to make it the traditional way 🙂 P.S. The top looks “wet” as I always rub a stick of butter over the bread right when it comes out of the bread machine or oven.

 

 

Basic Honey White Bread

Ingredients:

3 1/2 cups bread flour**
2 1/2 teaspoons dry yeast
1 1/2 teaspoons sugar
1 teaspoon salt
1 1/2 tablespoons olive oil
1 1/2 tablespoons honey (I used local honey, unpasteurized)
1 1/4 cups warm water

If using a bread machine, add ingredients as directed by the machine manual. Select the basic/white setting, 2-pound setting. **When the bread is mixing, watch to make sure you don’t need to add more flour. I did, as the dough was really wanting to stick to the sides of the machine. Add flour by tablespoons until it pulls away from the sides and kneads as it should.

Conventional Instructions:

Add all ingredients to the bowl of a large stand mixer. Using a dough hook, mix and knead dough for 5 to 8 minutes.

Put a little olive oil in a large bowl, and add the dough, turning once to coat the dough with oil. Cover the bowl and place it in a warm place to double in size for about one hour.

Punch down the dough, and shape into a loaf. Place dough in a well-greased 9 x 5 x 4-inch loaf pan. Cover the pan, and place it in a warm place to allow the dough to double, which should take about 30 minutes.

Bake in a 350 degrees Fahrenheit oven for 35 to 45 minutes, or until golden brown in color.

Yield:  One loaf
